Paella, pulao, biryani, and everything in between.
I had a small realisation recently, and once it clicked, I couldn’t unsee it. I am going through a massive rice phase.
For over a month now, I’ve been eating rice pretty much every day. At least one meal for sure, sometimes even both. And honestly? I have zero regrets.
It started quietly, without intention. A paella one day. A simple daal and rice another. And then suddenly, rice was everywhere. Pulao. Biryani. Fried rice. Arroz tres delicias. Rice with Sindhi curry. Rajma and rice. Sai bhaaji with brown pulao. Khichdi in its many comforting forms. Rice and curd. Rice with Thai curries. Rice with Chinese gravies. Rice with Indian gravies. Rice, rice, and more rice.
At some point I just stopped questioning it.
There is something incredibly grounding about rice. It does not try to impress. It just shows up. It absorbs flavour. It adapts. It comforts. Some days it is celebratory, like a proper biryani. Other days it is simple and quiet, like daal rice eaten slowly, without distractions. It fits whatever mood I am in without asking for an explanation.
I also love how rice follows me across cultures without effort. Spanish, Indian, Thai, Chinese. Every cuisine has its version. Every kitchen has its way. It feels familiar no matter where it comes from, which might be why I keep reaching for it lately.
So yes, there has been a lot of rice in my life recently, and I am fully leaning into it. No guilt. No carb anxiety. Just comfort and very happy meals.
Now I’m curious.
